Cashew Cheese sauce

When the Hubby gives a vegan cheese sauce a complement, its earns some recognition! This "cheese" sauce definitely doesn't replace cheese, but its a good alternative to ease the craving! It takes some time until it becomes less chunky, but if you can stand listening to your blender for a hot minute it's worth it!


Ingredients:

2 cups raw cashews (soaked for 4 hours in warm water)

1 cup water

1-2 garlic cloves

1 tsp onion powder

1 tsp pink salt

1 tsp pepper

1/2 tsp cayenne pepper

1/2 tsp cumin

1/2 tsp turmeric powder

1 small can diced green chili peppers

handful of fresh parsley and cilantro


Directions:

Once you've soaked your cashews, drain them and place in a food processor with all remaining ingredients. Blend on high for 5-10 mins until creamy. Place in a sauce pan and warm on low. Pour over spaghetti squash, pizza, nachos, etc.
